Yes — services sit next to the material. The category tree has a Stone Services branch alongside the product branches, and under it you will find Cutting & Fabrication and Installation.
There is no separate flow for services. Start New Demand, and at the Category step ("What do you want to source?") pick Cutting & Fabrication or Installation under Stone Services. Line items, budget, delivery point and Incoterms work exactly as they do for a stone demand. Sealed bidding applies the same way: suppliers see neither rival offers nor how many arrived, and only you compare them.
A demand carries one category, so you don't mix material and workmanship in the same request — open one demand for the slabs and a second one for cutting or installation. That way each job is quoted by the firms that actually do it.
Suppliers use the same categories: a company that picks cutting/fabrication or installation at the Stone categories step sees those demands in its matching demand feed. You can also filter by category on the Marketplace screen.
